Cupcake-o-rama!

I went to a dinner party last night and I baked Lemon Meringue Cupcakes and Old Fashioned Chocolate with Mint Chocolate Chip Buttercream.

Lemon Meringue Cupcakes! I made lemon cupcakes, piped some meringue on and then toasted them for a little bit more.

Old Fashioned Chocolate Cupcakes with Mint Chocolate Chip Buttercream. These were so fantastic. The frosting was perfect.

The Cupcake Courier! I got this for christmas and it was the most awesome thing EVER. It made transporting them to the party so EASY.

The courier all covered up. It has a nice handle and four snaps to make sure it stays closed. It hold 3 dozen cupckaes.

Ooh. Is the recipe for the Old Fashioned Chocolate/mint chocolate chip ones available anywhere?

The cupcake recipe is here.

I have tried a lot of different chocolate recipes, and this is by far the best. The cupcakes are perfectly moist and have a really rich flavor.

The frosting is a combination of two recipes - the base is from here.
(I use a full 1/4 tsp of peppermint, sometimes a little more, I taste as I add a drop at a time. (it calls for a 1/8)) (The cupcakes with the recipe did NOT turn out well.)

I got the idea to add in the chocolate chips from here.

They were fantastic! I was so happy with how they came out.

I'll bake something before I come down for the Donnas!

Could ya be any darn cuter? This and the other photo just tickled me to no end. I love that you are so excited about cupcakes.

Awww. Thank you! I'm exciting about baking and cupcakes are just fun! They are easy and you can make them look all pretty. :-)

They really do look pretty. And meringue on a cupcake is a totally revolutionary idea to me!

Those are some pretty pretty cupcakes! The meringue ones are particularly beautiful. That courier is fancy-style, too!

I'm SO happy with how the meringue ones turned out. I under filled the tins a little trying to get more yield out, but they turned out okay.

It's FANTASTIC.

(I love that you used your Flan icon for this)

Ooh! I'm giving a baby shower in February, and the luscious picture of the lemon meringue cupcakes are making me reconsider a big cake -- maybe I should do one of those cupcake trees!

[identity profile] raisintorte.livejournal.com 2008-01-28 04:57 am (UTC)(link)
That would be awesome! I love cupcakes and they are just about the perfect portion. I got both of the recipes online, so just let me know if you want them. :-)

Yeah -- I was looking at that site! She has some AMAZING recipes. I saw one for chocolate cupcakes with salted caramel buttercream YUM!

Okay, cupcake lady -- I need some advice. If I do two flavors of cupcakes, what two do you think would harmonize in flavor and look nice together in a tree?

[identity profile] lilac-way.livejournal.com 2008-01-29 01:54 am (UTC)(link)
When you have a sec -- send me the link for the lemon cupcake recipe, please!

[identity profile] raisintorte.livejournal.com 2008-01-31 02:47 am (UTC)(link)
I used this recipe for the topping - http://desertculinary.blogspot.com/2005/05/lemon-meringue-pie-cupcakes.html

And the lemon cupcakes from here- http://cupcakeblog.com/index.php/2007/08/lemony-ice-cream-cone-cupcakes-with-lavender-and-rose-frosting/

When she says it makes 12,it really does only make 12. So if you want more than 12 I would 1.5 it or double it. They have a very nice light lemon flavoring and compliment the mereguine very well.

If you want other advice send me an email and we can talk about other kinds of cupcakes. I've tried a LOT of flavors. I suggest doing chocolate and one citrus.
